Salmon(Alaskan for you), Cod and Crab

Thought I would pass on some recipes that I've tried and also one (cod) that the grand kids will even eat.
Salmon with a Watercress Cream
sour cream about 1 1/4 cup
a couple of tablespoons of butter
tablespoon of cooking oil (I use corn oil)
one garlic clove finely chopped
white wine about a generous 1/3 cup
salt and pepper
1 bunch of watercress(or you could use like baby spinach)finely chopped
four salmon fillets that are skinned
a couple of tablespoons of dill seasoning

put the sour cream in a pan and heat to just below simmering, remove from the heat and stir in the dill and then set aside
in a skillet melt the butter with the oil (the oil keeps the butter from burning), add the salmon and cook about 4-5 min on each side or until they are cooked throughout,remove the salmon and cover to keep it warm
add the garlic to the skillet and cook for about a minute stirring so it doesn't burn, pour in the wine and bring it to a boil letting it cook until it reduces down, add the sour cream mixture and let it cook for a couple of minutes until it thickens up, add the chopped greens, salt and pepper to your taste and let it cook until the greens begin to wilt. Put your salmon on your plates, spoon the sauce over them and then eat em up.

Cheesy Cod
preheat your oven to 400 degrees
2 tablespoons + of olive oil or corn oil
four cod or similar white fish fillets
juice of 2 lemons and also some of the zest
salt and pepper
4 ounces of grated gruyere cheese about a 1/4 cup (I have used swiss as a sub and that works well also)
about 4 tablespoons of bread crumbs
4 or 5 tablespoons of sour cream
4 garlic cloves finely chopped or a little less if you prefer

brush a roasting pan or baking dish with olive oil or corn oil, add your fish, sprinkle the fish with some of the lemon juice and then salt and pepper to your taste
mix the rest of the oil, cheese, bread crumbs, lemon zest,and about 6 tablespoons of the lemon juice together, add salt and pepper and then spread the cheese mix over the fish fillets
bake in the oven for 12-15 min or until the fish is cooked through, transfer to another plate and eat

this is the one that the grandkids really like and the first time they ate it would not believe it was fish, i guess they are getting to much mac and cheese

for those of us that have been in the Military Service or anyone that likes creamed beef on toast or as we knew it by S&%# on a shingle in the Marine Corps, here is a different slant.
1 can cream of mushroom soup
about 6-8 ounces of crabmeat usually 1 can if thats your choice, rinsed and sorted of the cartilage
1 tablespoon of lemon juice
a pinch of cayenne pepper
a pinch or two of dried marjoram
toast or biscuits

mix all the ingredients together except of course the toast and microwave for 3-4 minutes checking on it and giving it a stir, if it's too thick add a little milk or water to make it a gravy consistancy and after its done, serve it on the toast or biscuits. Heaven on a shingle
