Saturday Pre Race Dinner

This is about the easiest delicious meal you can cook. Basically roasted Porterhouses. We get fresh cut Porterhouse steaks (2) at our local meat market. About 1.25Lb each. The only spices we use is salt pepper and McCormick Grill Mates Montreal Steak seasoning. Season steaks on both sides and set aside. Set oven at 400. Start the generator and put your washed plastic wrapped potatoes in the microwave for 3 1/2 minutes. Put your well seasoned cast iron pan on high heat with coconut oil until sizzling. Sear your steak for 1 minute on both sides. Turn your potatoes over and reset microwave for 3 1/2 minutes. While I am searing, I double line a cookie sheet with HD foil. Place your steaks on the cookie sheet and bake for 13 minutes. Remove potatoes from microwave and set aside. When timer goes off, put your green steam bag vegetable in the microwave and cook for 5 1/2 minutes and reset timer for4 minutes. When timer goes off, Remove steaks to rest for 2 minutes. I usually cut up my potato and season. When the microwave goes DING shut off generator, Drain the little bit of water out of vegetables and season and serve, Place steaks on plate and enjoy.

I've looked at this post many times, thinking of how it relates to me. We had plenty of pre-race meals this weekend at the PNW Historics event in Seattle. Everything from Kielbasa to Pasta, to Rib eyes and beyond. All good and everytime the racing suit seems to get smaller :roll:
