I think the fridge runs off the engine battery on 12v only when the engine is running and doesn't run off the coach battery at all.

Actually the refrigerator runs off the house battery NOT the ignition battery.
The 12v mode of the refrigerator will not engage unless the ignition is running. This is controlled by a relay located under the couch which senses that the ignition is engaged. The power seat also runs off the house battery which seems strange but this is how airstream designed it. I guess airstream wanted to make the seat moveable without engaging the ignition.
